Spelt is an ancient grain that is similar to wheat in appearance. Spelt has a tough husk, which helps protect the nutrients inside the grain. The joy of spelt flour is it can be used in most recipes that have wheat flour, as well as the nutty, slightly sweet flavour. With great benefits of important sources of carbs, protein, fibre and essential nutrients like iron and zinc, so it’s a great replacement for wheat flour.
The below recipe is an easy option to bake your own healthy, nutritional bread and can also be baked as bread rolls.
INGREDIENTS:
- 3 cups spelt flour
- 2 1/4 teaspoon yeast
- 1 teaspoon salt
- 1 teaspoon guar gum
- 1 cup warm water
- 3 Tablespoons oil (macadamia is my favourite)
- 1 Tablespoons raw honey
- 1 cup warm water
METHOD:
- Place the spelt flour into a bowl (if possible use a mixer with a dough hook).
- Create a small hole in the flour and then place the yeast, salt and guam gum into the hole.
- A quick mix of the dry ingredients in the bowl.
- Add the wet ingredients, and knead for roughly 5 minutes. (spelt doesn’t require as much kneading as wheat)
- Let it rise in the bowl, covered with a light cloth until it is double in size.
- Shape it into a greased loaf pan, and let rise again.
- Preheat oven to 175’C, and bake for 30-40 minutes in the centre of the oven.
- Let cool on a cooling grid, slice, and enjoy!
